Classic Vanilla Ice Cream
Let’s start with a classic! This recipe is for a delicious and creamy vanilla ice cream, perfect for those who want to keep things simple.
Ingredients:
- 500 ml whole cream milk
- 120g caster sugar
- One vanilla pod, split in half lengthways or 1 tsp vanilla extract
- Six egg yolks
- 100 ml double cream
Directions:
- Pour the milk into a saucepan and heat over a medium heat until it comes to the boil.
- Add the sugar and vanilla pod (or extract) and stir until the sugar has dissolved.
- Raise the heat and bring it to the boil again.
- Meanwhile, whisk the egg yolks in a bowl until they are light and frothy.
- When the milk comes to the boil, pour it slowly over the egg yolks, constantly whisking as you do so.
- Pour the mixture back into the saucepan and place over a low heat, stirring constantly until it thickens enough to coat the back of a spoon (this can take up to 20 minutes). Be careful not to let it boil, or it will curdle.
- Remove from the heat and strain through a fine sieve into a bowl. Discard the vanilla pod (or wash and save it for another use).
- Stir in the double cream and chill in the fridge for several hours or overnight.
Chocolate Ice Cream with Hazelnut Swirls
Next up is this indulgent chocolate ice cream recipe with a hazelnut swirl! It’s perfect for those who love their chocolate fix!
Ingredients:
- 450 ml whole cream milk
- 120g caster sugar
- 75 g dark chocolate, chopped into small pieces
- 1 tsp vanilla extract
- Four egg yolks
- 100 ml double cream
- 30 g hazelnut spread
Directions:
- Place the milk, sugar, chocolate and vanilla extract into a heavy-based saucepan.
- Stir over a low heat until the sugar has dissolved and the chocolate has melted.
- Remove from the heat and whisk in the egg yolks.
- Pour back into the saucepan and stir continuously over a low heat until the mixture thickens and coats the back of a spoon.
- Pour into a bowl and whisk in the double cream until combined.
- Place half of the mixture into a separate bowl and stir in the hazelnut spread until combined.
- Pour both mixtures into a container, alternating between the chocolate and hazelnut mixtures.
- Place in the freezer for at least six hours or overnight.
Strawberry Ice Cream
This strawberry ice cream is refreshing and perfect for summer!
Ingredients:
- 500 ml whole cream milk
- 120g caster sugar
- 250 g strawberries, hulled and chopped (plus extra for garnish)
- Juice of ½ a lemon
Directions:
- In a medium saucepan, heat the milk over medium heat until it comes to a simmer.
- Add the sugar and stir until it has dissolved.
- Remove from the heat and add the strawberries, lemon juice, and cream.
- Use a stick blender or food processor to blend everything together until smooth.
- Pour into a freezer-safe container and freeze for at least four hours.
- Serve with fresh strawberries, and enjoy!
Biscoff Ice Cream
The following recipe is for all the Biscoff lovers out there! This rich and creamy ice cream has a lovely Biscoff swirl throughout.
Ingredients:
- 500ml double cream
- 375g condensed milk
- 100g caster sugar
- 1tsp vanilla extract
- 75g Biscoff spread, plus extra to swirl through
Directions:
- Start by whisking the double cream in a large bowl until it forms soft peaks.
- Add the condensed milk, sugar and vanilla extract and whisk until combined.
- Pour half of the mixture into a separate bowl, then add the Biscoff spread to one of the bowls and stir until combined.
- Alternate spooning the two mixtures into a loaf tin or container, then use a knife to swirl through the ice cream.
- Freeze for at least six hours or overnight.
Mint Chocolate Chip Ice Cream
This next ice cream recipe is a classic that everyone will love – mint chocolate chip! The best thing about this recipe is that it’s so easy to make. Plus, it’s downright irresistible.
Ingredients:
- 500ml double cream
- 300ml full-fat milk
- 100g caster sugar
- handful of mint leaves
- a few drops of green food colouring (optional)
- 200g dark chocolate, finely chopped
Directions:
- Start by heating the cream and milk in a saucepan over a low heat until just simmering.
- Add the sugar and mint leaves and stir until the sugar has dissolved.
- Remove from the heat and leave to infuse for 30 minutes.
- Strain the mixture into a clean bowl, discarding the mint leaves.
- Add a few drops of green food colouring if using, then stir in the chopped chocolate until thoroughly combined.
- Pour the mixture into a freezer-proof container and freeze for several hours or overnight until solid.
